Carrot Halwa with Sweetened Condesed Milk




Ingredients:
  • Carrots - 700 gms / 1 1/2 Lbs / 6 Cups Grated
  • Ghee - 2 Tbsp
  • Milk - 1 Cup ( I used Whole Fat Milk )
  • Sweetened Condensed Milk - 1/2 Tin Or 200 Ml
  • Sugar - 10 Tsp
  • Cashews - 10

Method:
  • Heat 2 Tbsp Ghee in a non stick kadhai, add in Carrots, Mix well.
  • After 3-5 minutes add Milk, mix well cook till carrots are soft.
  • Now add Sweetened Condensed Milk Bring to boil. Take little halwa using spoon and taste if, requied add Sugar, cook for 2-3 minutes.
  • Now add Whole chashew nuts mix well, cook for 2-3 minutes.
  • Serve Hot or Chilled.

Note :

  • You can add cardamom, if you like it.
  • You can Roast Chashew nuts and then garnish, just before serving.

Choley With Bell Pepper (Shimla Mirch, Donne Menasu) & No Tomato



Ingredients:
  • Chana (White) – 2 Cups (after Pressure cooked)
  • Poppy Seeds - 1/2 Tsp
  • Onion - 1 medium (1 1/2 Cups Chopped)
  • Garlic - 1 Clove ( 1 tsp, finely chopped)
  • Ginger - 1 Tsp (Finely Chopped)
  • Oil - 1 Tsp
  • Ghee - 1 Tbsp
  • Bell Pepper - 1/3 Medium ( 1/2 Cup Finely Chopped)
  • Garam Masala - 1/2 Tsp
  • Chilly Powder - 1 Tsp
  • Jeera Dhaniya - 1 Tsp
  • Amchur - 1/2 Tsp
  • Kasuri Methi - 2 Tbsp
  • Salt - 1 Tsp
  • Coriander Leaves - 3 Tbsp (Finely Chopped)

Method :
  • Heat Ghee in a non-stick Pan, add Poppy Seeds, when they slightly changes color add onion, 1/2 Tsp Salt and fry till they are slightly Brown. Transfer to the bowl.
  • Now in the same pan put oil, add in Ginger & Garlic, fry till they are slightly brown, mix well with onion.
  • Put in Bell Pepper, fry till they are soft. Mix well.
  • Add Kasoori Methi, fry for a while, now add all masalas one by one, mix well cook for 30 seconds.
  • Now add cooked White Chana (with its 1 cup of water) bring to boil. Add Amchur powder, mix well.
  • Garnish with Coriander Leaves. Serve with Rice / Roti.
