Mint Pulav

Ingredients:
  • Rice - 1 Cup
  • Onion (sliced lengthwise) - 1/2 Cup
  • Bay Leaves - 2 to 4
  • Oil - 1 1/2 Tbsp
  • Butter - 2 Tbsp
  • Salt - 1 1/2 Tsp
  • Cut veggies - 1 1/2 Cups (like Green Beans, Potatoes, Carrots, Green Peas)
  • Water - 2 to 2 1/2 Cups (Included for grinding Masala)
For Grinding:
  • Coriander Leaves (Chopped) - 1 Cup
  • Mint Leaves (Chopped) - 3/4 to 1 Cup
  • Cloves - 4 to 5
  • Cinnamon - 2" long
  • Ginger - 1"
  • Garlic (slightly roasted in oil) - 3 to 4
  • Black Pepper - 1/2 Tsp
  • Green Chilly - 5 to 6 (adjust to ur spice level)
  • Tomato (Chopped) - 3/4 Cup/1 Medium
Heat: Medium
Method :
  1. Grind the Masala.
  2. In a cooker heat Oil, add Bay Leaves for 15 to 20 seconds, add in Onion. Saute till transculant.
  3. Add Vegetables and salt. Saute and leave for 30 seconds.
  4. Add Masala Grainded. Mix well, leave for 2 to 3 minutes.
  5. Add Rice, mix well.
  6. Add Water. When water comes to boil put butter and close the lid.
  7. Cook till you get one wistle / for 7 mins.
  8. Mix well & serve with Raita.
Serves: 6 to 8.
Note:
  • If cooking on normal pan, cook for 15-20 minutes on medium-low-heat.
