Stuffed Bell Pepper

Ingredients:
  • Bell pepper (Red/Green/Yellow) - 2
  • Potatoes (I use Idaho) - 2 medium size
  • Red Chilly Powder - 1 to 2 Tsp (adjust to ur taste)
  • Turmeric Powder - 1/2 to 1 Tsp
  • Jeera Powder - 1/4 Tsp
  • Dhaniya Powder - 1/4 Tsp
  • Green Chilly - 1 (finely chopped)
  • Coriander Leaves - 1 strand (finely chopped)
  • Salt - as per taste
  • Oil - 1 Tsp (for greecing)
Method:
  • Boil the potatoes, peel, and mash.
  • Add Chilly, Turmeric, Dhaniya, Jeera powder, Green chilly, Corainder leaves & salt to mashed potatoes.
  • Cut top of Bell Peppers (retain this top portion), take out seeds. Greece inside with little oil.
  • Now, fill in the mixure and cover with cut top portion. Greece outside with little Oil and microwave for 15-20 mins.
  • Serve with Rice, Dal, or Chapati.

Note:
  • You may required to add little more salt to mixture as there is no salt on Bell Peppers.
  • While in microwave, for every 5 mins check bell peppers. Because, every microwave takes different time to cook.
  • To make in Oven, Preheat @ 350 degree F. Bake for 10-15 minutes.
